How we cook, and why it changes

An oak grill, a bread oven that runs from 5 am, and a menu written around what twelve farms bring on Wednesday.

Three fires, one kitchen

Most of what you eat here has been near a flame we lit that morning.

  • The oak grill

Lit at 3 pm, cooking by 5. Steak, steelhead, chicken thighs and most vegetables. Split oak from a mill in Estacada, never gas.

  • The bread oven

On at 5 am for June's sourdough, then the galettes and the chicken. It holds heat into supper service.

  • The stove

Stocks, sauces and the risotto. Bones from the chicken become Thursday's broth.

From the pass this week

We don't use food photos. These sketches match the plates as they leave the kitchen.

How local, in numbers

We track what we spend and where. Summer is easy. Winter means roots, grains, and what we put up in August.
